Aren't police officers supposed to take statements from witnesses on both sides re an attempted assault with a vehicle in Florida?

Supposed to, yes. Required to, no. Do they always, no. Should they, absolutely.
Answer
Good police work would require the taking of statements from all of the witnesses. If the police fail to do so then obviously that can be brought up during the trial. The jury can consider if the police did sloppy police work or if there were things that were missed. But there is no legal remedy, such as getting the charges dismissed, simply because the police didn't question all of the witnesses.
